Cookie not deleting all cache and databases

Hi there, I'm running Cookie 6 v6.8.4 on a MacBook Pro with updated Ventura and I only use Safari Version 16.1 (18614.2.9.1.12)
cookie tells me everything is cleaned but when I look in Safari >> Settings >> Privacy tab >> Manage Website Data ... I am shown a range of 'cache' and databases, local storage which isn't always deleted when I close my browser.am I doing something wrong here or missed installing a file ?? Thanks for your assistance for a great App
