Can I make Cookie do the work; or is it all a manual operation?

New to Cookie (6.6.1 on 11.6). It looks like a really useful, sophisticated piece of software. Thanks!
But I have over 800 cookies (in Safari 15)!
I can see that Cookie can obviously manage them all and tell me almost every conceivable attribute of every single one of them; great!
But I'm not sure how I can make Cookie work for me by sifting out the old and potentially 'malicious'/over-'snooping' cookies.
Do I actually have to go through and look at every cookie I have and decide manually whether I want to keep it, please?
Or is there some (say, ('Artificial') Intelligence!) way that I can have Cookie do the pruning for me?

@marksealey you could configure it to only remove tracking cookies.
but I would recommend just deleting everything except sites you visit often and require a login.For instance, I only have around 20

Is your recommendation geared towards speeding up your browser and keeping things as simple as possible, please? If so, I like that idea! I guess we've got so used to cookies…
